Zucchini Patties with Baked AsparagusIngredients: 1 medium zucchini, grated (about 1 ½ cups) 6–8 spears of asparagus, trimmed and roasted (see below) 1 large egg ⅓ cup grated Parmesan cheese ½ cup breadcrumbs (panko or regular) 2 cloves garlic, minced 2 green onions, finely sliced (or ¼ cup finely chopped red onion) 1 tbsp chopped fresh parsley (optional) ½ tsp salt ¼ tsp black pepper Olive oil for pan-frying For Roasted Asparagus: 6–8 spears asparagus 1 tsp olive oil Pinch of salt and pepper Instructions:1. To those unfamiliar with her, I understand.     Fran Lebowitz has been described as an author, public speaker and actor. Her commentary on American life has been noted by some as sardonic.
