Lebanese Style Baklava     1 lb. Phyllo dough (thawed at room temp 3-4 hours or overnight)1 ½ Sticks unsalted margarine (or butter)2 cups finely chopped nuts2 Tbs sugar¼ Tsp cinnamondash of nutmeg9x12 pan, pastry brush, sharp knife Mix nuts, sugar, cinnamon and nutmeg together and set aside. Melt margarine and start layering the Phyllo dough. Every 2 pieces of dough, brush with margarine using half of the dough. Spread the nut mixture evenly and drizzle a little margarine over nuts. Layer remaining dough, brushing with every 2 pieces of dough leaving the very top dry so that it may be cut easily. With a very sharp knife first cut lengthwise, app 1” wide strips, then cut similar strips, diagonally app 1” apart to form small diamond shaped pieces. Bake at 300o for 50-60 minutes until a go...

Prospect CT Tree Lighting and Chrtistmas Parade Sunday Dec 2     On Sunday, December 2 starting at 5:00 PM the town of Prospect CT will celebrate it's traditional Tree Lighting ceremony and the accompanying Parade of Lights in front of the Town Hall.   The Annual 'Festival of Trees' will run from 2:00 om to 5:00 pm on the same day in the Town Council Meeting Room in Town Hall. The trees come from local clubs and merchants from Prospect, all of whom  paid $25 for a 3 foot tree, and decorated it specifically for the judging. The tree entries are judged in several categories.  This year, and in partnership with the Democrat Town Committee, The Republican Town Committee is going to utilize the 'Festival of Trees' to draw attention to the simultaneous 'Pack The Pantry' event where attendees ...

Lunch with a View . . . . Wednesday Photos Connecticut, like most of the North East, is recovering from Sandy. To add insult to injury, we're expecting a Nor'Easter tonight, giving us up to 6 inches of snow. Election Poll Locations Time in Prospect CT Tuesday Nov 6 is election day in our country, and this is an especially big election as it is a Presidential election year. Here in Prospect CT, we have several key seats being contested. In addition to the President and Vice President, we have a US Senate seat to fill, a State Senate seat, a US Representative, a State Senator, State Representative and a Registrar of Voters. Sandy, Gone and Preparation Helped a Lot Hurricane/Tropical Frankenstorm Sandy has passed through the area and at least in our corner of the world it wasn't as bad as had been projected. The CT shoreline took the brunt, mostly caused by the high tides and the surge created by the storm.   The hardest hit area of the storm, ironically appears to be the South-East corner of the state, New London'Groton. This area was spared by both Irene last year and the Halloween blizzard. Debris is all over the area, and there are some minor repairs that will be needed on some homes, but the loss of life was just 2 people so preparation did matter. Sandy is Creating Quite a Storm in Central CT Sandy is hitting Central CT with quite a broad path of wind and rain. The shoreline is being ravaged and by the peak of the storm tides are expected to be almost 12 feet above normal, so waterfront properties are going to be hit hard. Here in Prospect CT, we have areas of power outages and the firehouse in the center of town has been set up as an emergency shelter. For residents that need some help as their power is out, it’s requested that you come up and bring your soon to be perishables with you so that they can be used for a ‘Mixed stew”.   Schools throughout most of the area have already been cancelled for tomorrow and businesses have notified their employees that they will be closed and only critical services people are being called in...

Trick or Trunk, a Safe Way to spend Halloween   Friday night we attended a Trick or Trunk Halloween event with our youngest Grandson, Raphael. This was an interesting event and was just like Halloween at the speed of light. Cars assembled on the town Center in Colchester, trunks were opened, decorated and like a horse race, at 6 PM promptly, it was Go. The kids came around to the cars, gave their ‘Trick or Treat’ cry and opened up their bags. No door ringing, no stopping to chat, just grab the candy and slide next door. For an hour, we passed out candy, over 500 pieces, and the kids still came. There was music to fill the night air. I can’t even begin to count the number of times I heard ‘Monster Mash’ and ‘Thriller”. Prizes were given out for best decorated trunk and also for best carv...

It Was A Wondeful Morning But Today was Peak The Autumn colors hit peak this weekend, and there was enough brightness that they could be appreciated.   It is a beautiful time of year for the colors, and having an area to walk where it's peaceful and the scenery can be appreciated is even better. Not to mention a low score. The only issue will be that once I get home, it won;t be long before I see these colors needing to be raked and picked up. The Autumn Leaves, They Start to Fall There was a haze in the morning, and as the sun started to burn it away, the colors started to show, and the view was just magic. As we walked a little further, and the sun got a little higher, it was still a blaze of color. Still early in the season, but beautiful still. The colors appear to be brighter this fall. Maybe all the late summer rains have something to do with it. This tree appeared to have just been touched by the fall, with the tips of the branches showing a hint of red, as if it had been framed. The leaves are pretty, and the colors Mother Nature gives us are special and very fleeting, so take a drive through the countryside and just appreciate the free show that's being given to us.   The Autumn Leaves, They Start to Fall

October is Breast Cancer Awareness Month, Think Pink   Cancer is a horrible disease and everyone knows someone that has it, has had it, or has died from it. October is Think Pink month, and here in Connecticut, there are events scheduled all month. Breast Cancer is something that has hit close to home, as my wife has gotten ii in each breast on separate occasions, and has had cancer a total of 3 times, being free for almost 6 years now. I have 2 female cousins that have had it, and even a slightly built male friend that has had double breast cancer. Yes, men can be afflicted as well.
