Those of you who read my posts know I received a gift, yes it was a cookbook. Now with that said I have been looking at the recipes for a month or so and I kept gravitating towards this recipe.Needless to say, I kept thinking it needs something else with it. I read the recipe closer and there were two suggestions, Schrimp or scallops would be a good upgrade. Well, I chose Langostino Tails. What is for dinner tonight? Diane wanted to know, I told her a surprise well with that said, I put together a few items I had at home.:1. Squid Ink Pasta (linguini from Italy)2. Pasta sauce I was making this afternoon for a future meal, needless to say I make enough to fill four jars for the future. Now we might only have three more left.3. About a pound of Mussels frozen ready to go4. A few chopped fresh Italian Kale.There you have it easy to make, boil the pasta al dente, while the kale, mussels and sauce are simmering.Mix together the al dente pasta and serve it with aged parmesan cheese. Welcome December! As you can see even the table is set.Things to do tomorrow: Bake the brined Turkey and then finish off the side dishes that are already oven ready.The only thing left to do is make the mashed potatoes. Anytime one prepares for a big meal, you need to plan ahead, and prioritize. Just like in Real Estate, you need to plan ahead and prioritize what needs to be done early and what can be done later.Well with that said no I did not buy the can that looks like it came from a dog food container.Her it is truly an easy recipe:    1. 12 oz or so of freshly washed cranberries and the ones that needed to be tossed have been.    2. 3/4 cup of fresh squeezed orange juice & 1/4 of water    3. 1/2 cup of sugar of your choice    4. One cinnamon stick    5. pinch of salt    6. slice of orange peelCook for about 10-15 minutes to reduce the liquid and pop 75-80% of the cranberries.Let it cool and put it in the fridge to be served in 24-48 hours at the Thanksgiving Dinner. Wishing you a safe and healthy ... 11/26/2024
