Everyone is Irish on St Paddy's Day and St. Paddy's Day weekend. So, with that said I decided tonight to do an Irish Dinner in respect to St. Patrick's Day weekend.Yes, you guessed correctly, Cabage, sausages and potatoes. How much more Irish can you get?Easy recipe:1. one medium onion (I prefer sweet onions) Sautee for five to ten minutes depending how much time you have. The longer the better it will caramelize the onion.2. chop some Celery and carrots of all different types3. Two or three different sausages I personally like chicken sausages with two different flavors. When we grew up Friday Dinner was always a variety of fish. The standard meal was fried fish and fried potatoes.Well as you know I try to make dinners healthier than my parents did. So here it is baked potatoes, baked cod, baked Marylin style crabcakes and baked carrots.Homemade Tartar Sauce the only thing not homemade is the cetchup but only Diane uses it:) and if you are wondering the lemon is from the backyard.In all fairness I had a true Real Estate Day, and this was the quickest easiest meal to put together on a Friday Night. Speechless Sundays: If you think cats do not communicate, clearly you have not been exposed to cats. Now with that said, Jill has been coming up to me in my home office... talking, yelling and I ignored her.... then I went in the kitchen and look at the main photo.The empty hole is where she would eat kibble. Lately she has been on various medication and has some teeth pulled on top, hence she has become a fan of wet food and prefers wet food over kibble. Well as you know I love bring recipes up to the next level this time I chose to improve on Jean Georges Vongerichten' s recipe. It was a fantastic Butternut Squash soup recipe, which I have made over the years, but I thought we need to improve on it.Now with that said here is the recipe with my changes: 1. four tablespoons of butter2. two teaspoon of yellow curry powder3. large butternut squash approximately 2lbs. (seeded, cut into one inch or smaller chunks.4. Three cups of chicken stock5. one tablespoon of Thai fish sauce6. juice of lime or to taste7. 12 medium to large shrimp8. Cilantro to garnish9. Hence this post just for fun... I opted to post some fun memories from my life, my family and Diane's family. Well  Debe Maxwell, CRS  posted a recipe about chicken Gnocchi, I thought what a great recipe let me see if I can incorporate it and make my own version.Well with that said, I had baked chicken breast from the other day aka leftovers. I always have the ingredients she listed, then I thought maybe I should add some Mushrooms and some Sun-Dried tomatoes to bring it up to the next level.I also added some chicken stock as well as some heavy cream at the end.Needless to say, I chose to use a different pasta. Speechless Sundays: did you know it was national clam chowder day?.. well it was, I found out because one of my favorite restaurants sent me an email. so with that said I had to make New England Clam Chowder.It is a very easy meal if you have the ingredients on hand.
