Yellowtail Carpaccio in Yuzu Sauce... on  a Saturday Night. Keep in mind this was just the appetizer!This is such a delicious Japanese Sashimi, the ingredients are simple Hamachi, also known as yellowtail, garlic Yuzu, Soy Sauce and marinated pickles. Others make this with Jalapeno instead of pickles I find it that distracts from the sweet flavors of the Sashimi Grade Hamachi and my way complements the citrus flavors.The key is to have quality ingredients, focus on the Hamachi there are no dark parts. Today is December 7th and every year I think of the year 1941. This day as FDR said 'would live in infamy.' There has been a lot of years that passed and not many people even remember this day when the Empire of Japan attacked the United States at Pear Harbor.My point is we should remember this day and learn from it. I have many friends who are of Japanese descent. I learned to love Sashimi, Sushi and many other ethnic foods that we can attribute to the Japanese because, of the friendships we developed and I learned to appreciate the food I was not familiar with.Most importantly, the lessons are, that not all people are evil. Not a Wordless Wednesday Post: what do you do with your Thanksgiving decorations? Some people put them on their front steps and let nature take its course and toss them in the trash. Not me, well if you know me here it comes....I decide to repurpose them. Ending the Thanksgiving Weekend: My tradition has  always been that I would  bake the small pumpkins. They  were part of the indoor  decorations. Now they would become the vessel for the left over Turkey Soup.From one perspective it is very unusual but at the same time very delicious.Easy to do, you cut the pumpkin, clean out the insides, wipe with a little Olive Oil the insides and bake them for 15-20 minutes depending on the size at 400 degrees.In the mean time warm the left over Turkey Soup on the stove top. Not so Speechless Sunday: Thanksgiving 2021 is in the books now... as most of you who know me and read my posts, know how much I love Thanksgiving. This year we only had one friend who came over for the main meal and one of our neighbors who came for desert. Needless to say I still made all the traditional items for the meal. 13lbs Turkey, Dressing, Mash Potatoes, Butternut Squash, Butternut Squash Soup, Green Bean Casserole and Brussels sprouts, anyway you get the idea. Let's not forget my Cranberry Sauce too)I am so thankful that I am in a position to do this and make so many people happy. Active Rain is an amazing community and I  wouldn't have been able to accomplish all that I did this year without you, our amazing member community support. I have always been a fan of Thanksgiving Dinners with Family and Friends... my first attempt to bring something to a family gathering was about 27 years ago... I made this out of the ordinary Cranberry Sauce... two hours of labor and forgot to take it with us:)) we all had a good laugh... so the tradition continued... I would make the Cranberry Sauce and would have company over and would forget to serve it... gratefully our friends and relatives were outspoken enough for me to get with it.So with that said this year I made the Cranberry Sauce yesterday and hopefully I will not forget it to serve it... gratefully there will only be a total of three at the dinner table for the main course and one more for desert.... so with that said I do not expect to forget it.So let's go to the recipe:...

Grateful to have such a wonderful furry family... yes it is 10 or 9 days away from Thanksgiving my  favorite Holiday of the year! Thanksgiving 2021 is right around the corner I am so grateful for so many things .For starter have exceeded my own life's expectation. Here I am after many people thought I would not live to be 20 or 30 or 40 years of age... Needless to say I managed to cross the 50 and also the 60  zero age point....Despite the dooms day Sayers I am still here. The trials and tribulations of adding and changing outdoor lights.... As most of you know we repainted the exterior of our home. We thought at this time rearranging  the light switches would be a great idea as well.Just to give you a background as to the 'why' we wanted it done. We had a switch in the garage which  turned on a couple of the lights. We improved on this  a few years ago by adding a timer.  As you know, here in Los Angeles we have 'Time Changes' to deal with in the Fall and in the Spring.  Hence  we had to to reprogram it twice a year... after a while it got to be a challenge the programing that is. Hence we just  reverted back to turning it off manually in the morning and  turning it on at night by over riding the Timer. Yes you gathered it by now, we did not know how to ...
