Shortest was a sale I made in 2000 in the crazy SF Bay Area market:
less than 1 minute.
(The seller, agent, buyer and I sat at a table, they dictated the terms and we wrote them in. My buyer signed, the seller signed and 10 minutes later we were opening escrow, because we did all this in the escrow office conference room).

Jeff Dowler The longest time between offer submission and an accepted contract was four years. We were in the recession so the buyer leased the property. It did close four years later.
The shortest time was about an hour. It was a divorce situation and the lister wrote an offer to buy the property back.
