There is something called Active Listening. Several commenters have talked of listening, but how does the client know they were heard? Active Listening. To do this, do as Richie Alan Naggar said and repeat what you heard. You don't need to repeat every word, and not as faithfully as a mimic, but don't change the words a lot or they won't seem like the speaker's.
If client says something, and hears the point being repeated by you, they will feel heard, and it builds trust. If you then follow through with whatever was said, you will create a fan.
